Avui hem escollit aquesta recepta del bloc <a href=\"http:\/\/cuinetes.bloks.cat\/2012\/01\/16\/tortell-de-reis-una-tercera-recepta\/\">Cuinetes<\/a> de <a href=\"http:\/\/cuinetes.bloks.cat\/sobre-mi\/\">Nuni<\/a>. Esperem que la disfruteu.<\/p>\n<p>Ingredients:<\/p>\n<p>Per al sucre glac\u00e9 aromatitzat<\/p>\n<p>120 g de sucre glas<\/p>\n<p>La pell de mitja llimona (nom\u00e9s la part groga)<\/p>\n<p>La pell de mitja taronja (nom\u00e9s la part taronja)<\/p>\n<p>&nbsp;<\/p>\n<p>Per preparar la massa mare:<\/p>\n<p>70 g de llet sencera<\/p>\n<p>10 g de llevat fresc de fleca<\/p>\n<p>1 culleradeta de sucre<\/p>\n<p>130 g de farina de for\u00e7a<\/p>\n<p>&nbsp;<\/p>\n<p>Per a la massa:<\/p>\n<p>60 g de llet sencera<\/p>\n<p>70 g de mantega a temperatura ambient<\/p>\n<p>2 ous mitjans<\/p>\n<p>20 g de llevat fresc de fleca<\/p>\n<p>25 g d\u2019aigua de tarongina (o al gust)<\/p>\n<p>450 g de farina de for\u00e7a<\/p>\n<p>1 pessic de sal<\/p>\n<p>Els 120 g de sucre glas que haurem aromatitzat amb la llimona i la taronja<\/p>\n<p>Per a la decoraci\u00f3:<\/p>\n<p>Ou batut<\/p>\n<p>Sucre humitejat amb unes gotes d\u2019aigua<\/p>\n<p>Taronges i cireres confitades<\/p>\n<p>Recordeu la figureta del Rei i la fava (nosaltres la incorporem quan farcim el tortell, per\u00f2 si no el voleu farcit les heu d\u2019afegir quan ja hem donat la forma al tortell cru, per la part de la base).<\/p>\n<p>Una corona de Rei<\/p>\n<p>&nbsp;<\/p>\n<p>Elaboraci\u00f3 tradicional:<\/p>\n<p>La massa mare<\/p>\n<p>Temperar la llet i desfer-hi el llevat. Barrejar amb la resta dels ingredients i formar una bola.<\/p>\n<p>Posar un bol amb aigua t\u00e8bia i ficar-hi la bola de massa mare. Quan la bola floti, en aproximadament 10 minuts, estar\u00e0 a punt per utilitzar-la amb la massa principal.<\/p>\n<p>La massa principal<\/p>\n<p>Barrejar el llevat esmicolat amb la llet t\u00e8bia per a la seva fermentaci\u00f3.<\/p>\n<p>Tamisar la farina en un bol amb l\u2019ajuda d\u2019un colador.<\/p>\n<p>Un cop tamisada, afegir els ous, el sucre i la mantega, un pessic de sal i l\u2019aigua de tarongina, juntament amb la ratlladura de mitja llimona i la de mitja taronja i la massa mare.<\/p>\n<p>Barrejar-ho tot de manera en\u00e8rgica. Si teniu una batedora amb ganxos per pastar us vindr\u00e0 molt b\u00e9, si no, a m\u00e0.<\/p>\n<p>Posar la barreja sobre la taula de treball, en la qual pr\u00e8viament hem posat una mica d\u2019oli per evitar que se\u2019ns enganxi. Comen\u00e7ar a pastar amb les mans untades.<\/p>\n<p>Quan hagi quedat la barreja el\u00e0stica, l\u2019apinyem en una bola i deixem llevar per tal que augmenti la seva mida (cinc hores com a m\u00ednim). Jo la vaig preparar abans d\u2019anar a dormir i la vaig deixar llevar tota la nit.<\/p>\n<p>Una vegada que la massa ha duplicat el seu volum, dividir-la en dos (llevat que preferiu fer-ne un de gran) i donar-los forma de bola. Deixar reposar les boles cinc minuts.<\/p>\n<p>A continuaci\u00f3 donar-los la forma de tortell. Per aix\u00f2, cal introduir els dits en el centre i anar engrandint el forat. Si la massa tendeix a encongir-se, \u00e9s que no est\u00e0 ben relaxada: deixar-la reposar deu minuts i es manejar\u00e0 millor. Un cop donada la forma, col\u00b7locar-lo sobre una safata de forn en la qual haurem posat paper d\u2019enfornar.<\/p>\n<p>Deixar reposar fins que doblin el seu volum. Aquest proc\u00e9s de llevat \u00e9s m\u00e9s curt, unes dues hores.<\/p>\n<p>Pintar amb ou batut, molt suaument, sense punxar el tortell, i adornar amb sucre humit amb unes gotes d\u2019aigua i fruites confitades.<\/p>\n<p>Preescalfar el forn a 200 \u00baC, escalfor a dalt i a baix.<\/p>\n<p>Enfornar entre 15 i 18 minuts, i baixar la temperatura a 180 \u00ba els \u00faltims 10 minuts de cocci\u00f3 (si veiem que es torra massa, posar un paper d\u2019alumini per sobre. Important!
